Black beans have a dark shell that is high in antioxidants which help repair free radical damage. This means that they can help prevent cancer and signs of ageing.

Gluten-free Black Bean Walnut Brownies Recipe

INGREDIENTS:

  1. 1 cup walnuts, divided
  2. 19oz can of black beans, drained and rinsed or 2 cups cooked black beans
  3. 3 eggs
  4. 3 Tbsp coconut oil, melted
  5. 1/2 cup cocoa powder
  6. 3/4 cup maple syrup
  7. 1 tsp baking powder
  8. 2 tsp vanilla extract
  9. ½ cup bittersweet chocolate chips

Directions:

  1. Preheat oven to 350F and line an 8x8 baking pan with parchment paper.
  2. Place the ½ cup walnuts in a food processor and process until you reach a flour like consistency.
  3. Add the beans, eggs, coconut oil, cocoa powder, maple syrup, baking powder and vanilla and blend until smooth.
  4. Gently fold in chocolate chips and ½ cup chopped walnuts.
  5. Transfer into the lined pan and even out the top with a wet spatula.
  6. Bake the brownies for 40 to 35 minutes or until a tooth pick inserted into the center comes out clean.
  7. Cool before slicing and enjoy!
